Happy May! I hope you had a great week! I've been with this fun group in Ireland! It's been amazing!

This is a picture from the Ring of Kerry. It was absolutely gorgeous! So green! We've had perfect weather with just one day of rain! It even got up to 70 degrees!

After the most wonderful trip to Ireland, most of my group went on with me to Scotland! That's where we are now. Last night we had so much fun on a food tour of Edinburgh.

Today we're going on a walking history tour to learn all about this beautiful city. After that some of the ladies are taking a handbag making workshop. We'll each make a purse with leather and Scottish tweeds. Tonight we're going to Johnnie Walker for a Scotch Whiskey tasting. I can't wait for all of it!

Saturday is the Kentucky Derby! I'll have to figure out a way to watch it here. I never miss it! I was born on Derby Day, so every year I watch! It's a tradition. Anybody else love watching the derby? It's so much fun!

I always make my Cucumber Sandwiches on Derby Day. They are so fresh and a taste of spring! So pretty too!

For dessert in honor of the Ketucky Derby why not make a southern classic, banana puddin'. That's what they call it down south. My Banana Cream Trifle is a kicked up no bake banana pudding recipe and looks so pretty layered in a pretty glass trifle dish or bowl. Or make minis and layer this dessert in wine glasses or even cleat plastic cups!

Cinco de Mayo is coming up this week! I can't wait to celebrate when we get home!

Why not have a fiesta. It doesn't have to be a big party. I much prefer small get togethers with the family. Why not kick off the weekend with my Blender Salsa. It tastes just like the salsa they serve at the table at your favorite Mexican restaurant. I just use canned tomatoes and add few fresh ingredients like onion, garlic, and cilantro. Throw it all together in your blender and you've got some of the best fresh salsa ever! Here's a tip. Heat up the chips! I spread tortilla chips on a baking sheet and bake them in a preheated 350 degree oven for just a couple minutes! What a difference it makes! Just try it! Warm chips and fresh salsa! It always gets the party started!

I LOVE guacamole! I learned to make really Great Guacamole in Mexico. Authentic guacamole doesn't have alot of ingredients. It's super simple and so fresh! Healthy too!

Instead of Tacos, why not make these super fun Taco Cups! How cute are these! You bake the tortillas in muffin tins. The kids will love them! Super easy and fun to eat! Everybody can load them up with their favorite taco fixin's. Now that's a party!

Even though it's spring my slow cooker is still getting a workout. I use it all year round. Got chicken? Throw it into your crockpot and make my Honey Lime Chicken. It's a family favorite! It's nice 'n lite too! We piled the chicken in tortillas for tacos or burritos. It's also delicious used in a great big taco salad!
