Hi there

Happy Friday! I hope you had a great week! I'm waking up in beautiful Puerto Vallarta, Mexico today! This is one of my favorite vacation spots! My group got here Tuesday and we are having so much fun!

Yesterday we went whale watching on a private yacht. Today we are doing a tequila tasting and taking a city tour. This weekend we're taking an authentic Mexican cooking class!

It's spring! When I get home I can't wait to make some of my fsavorite spring recipes!

My Lemon Poppy Seed Cake is one of my most popular recipes! It's a burst of sunshine even on the cloudy days! This cake so easy because it starts with a box of lemon cake mix.

Don't use the recipe on the box. Use my recipe instead! I've got some secrets to jazz it up and make it over the top moist and delicious.

I also make a lemon glaze to make it extra special.

I'm a lemon lover so this is one of my favorites, especially this time of year! It's a taste of spring! Perfect for Easter too! You gotta try it!

For dinner this time of year I'm ready for something a little lighter.

My Best Ever Lemon Chicken really is the BEST EVER! The lemon, garlic wine sauce keep the chicken so juicy. The sauce is lick the plate good!

We love this served with rice, buttered noodles or potatoes! You can bake it in the oven but if the weather is good I love to do this outside in a foil pan on the grill!

It's super yummy both ways!

Besides lemon, cooking with asparagus is also my way to bring on spring. I can't wait for asparagus season when you can pick your own! But, right now it's asparagus season at the grocery store.

I found some wonderful asparagus at the grocery store and it was on sale BIG TIME! LOVE THAT! Don't boil it - you'll spoil it!
