Leftover Recipes and New Trip to Italy!

Hi there

I hope you all had a great Thanksgiving! We have a house full this weekend! I'm feeling so blessed!

I want to say thank you so much for all of your love, kindness and support! I love sharing my recipes with you! Our fridge is so full this this morning. So many leftovers! You too?

I can help! I have some super easy breezy recipes to use them all up! Let's start with the turkey.

Got leftover turkey? You know me! I'm the queen of casseroles. I've got so many ways to use up that turkey! My Terrific Turkey Tetrazzini is a my kids favorite! It's loaded with cooked spaghetti and leftover turkey in a creamy sauce, topped with Parmesan cheese and crunchy breadcrumbs. It's the BEST! This casserole freezes great too! My Turkey and Stuffing Casserole is a great way to use both the turkey and the stuffing. Underneath the top layer of crunchy stuffing is a creamy layer of yummy sauce and super moist leftover turkey! All that sauce keeps the turkey from getting dry. You can use boxed stuffing on top too. I love this casserole!

Here's one more. My Taste of Thanksgiving Casserole uses almost all the leftovers, from the turkey, the veggies, the stuffing, potatoes and even the gravy! When, we are feeling like we are just

"turkey'd -out " I make this, but I don't bake it. I freeze it. Then when we want a taste of Thanksgiving it's in my freezer. Just thaw it and bake it and serve it with some cranberry sauce. So good!

It's getting chili here in Wisconsin. Why not make a big batch of soup with that leftover turkey to warm you up. I love my Southwest Turkey Soup because it's really healthy but hearty too! It's kind of like a chicken chili. It's just something a little different to do with the turkey. I serve it with our favorite chili fixin's. This soup freezes great too!

Got leftover mashed potatoes? Turn them into my Mashed Potato Soup. It's so quick and easy! We love this soup loaded with cheese, bacon, and green onions on top. Yum! Click Soups for more soup, chili and stew recipes to warm you up.

We ALWAYS have leftover cranberry sauce. By the way it freezes great. My crockpot Cranberry Meatballs with cranberry sauce and just a couple other ingredients are ALWAYS a winner! We made them yesterday and they everybody loves them. They are the perfect holiday appetizer. They are also great for dinner over mashed potatoes.

Here's another holiday winner. My Cranberry Crostini seem fancy but they are so easy. Pickup some brie cheese, a loaf of French bread and use that cranberry sauce to make these. I make super cute Cranberry Brie Bites too! Click Appetizers for more recipes to really get the party started!
