Hi there, ! Happy Friday! I hope you had a great week! We are waking up in beautiful Puerto Vallarta Mexico.
We went whale watching on a private yacht yesterday. It was AMAZING! The weather has been perfect! I love this city! Besides beautiful beaches and sunsets it is filled with so much history and charm. We went with a wonderful guide to see some of the most famous spots in Puerto Vallarta like this bridge
connecting movie stars Elizabeth Taylor and Richard Burton's two homes. Earlier in the week we went on a taco tour. From fish tacos, to shrimp tacos, pork, chorizo, and steak tacos too! We tried them all! We went in search of some delicious margaritas and topical cocktails too! Today we are headed to a huge Mexican farmers markets to shop. Then, we'll use the ingredients in an all day cooking class. We're making tamales, guacamole, two different salsa and lots of other authentic Mexican
dishes! I can't wait!

We fly
out on Sunday. It's always hard when a vacation comes to an end, but there's no place like home. We've had the most amazing food on this trip and I can't wait to get home and do some cooking. Here's what I'll be making when I come home...
I'm
going to buy some spices at the Mexican market today. I'll use them to make my Pork Tenderloin Tacos. They are so quick and easy! I might have to blend up a batch of margaritas too!
The
guacamole here is so fresh. I learned how to make my Great Guacamole here in Mexico years ago. It's such a simple recipe with very few ingredients but I think it's the BEST EVER! Try it. I hope you agree!
Confession... I'm not looking forward to the wintery weather back home. The weather here in Mexico has been perfect all week -- sunny and warm and just gorgeous. I'm going to need to make a big batch of soup to keep me warm and cozy. My Mexican Meatball Soup is a nice 'n light soup that's full of flavor! It's crazy easy too; soup's on in 20 minutes or less. If you use turkey meatballs, it's even healthier! Speaking of Turkey...
Why
not change up Taco night and make it a little more healthy. The kids will love my Turkey Taco Skillet. It's like a Mexican Fiesta all in one skillet. What fun!
The
fruit here in Mexico has been wonderful. Every morning I can't wait for the fresh fruit plate at breakfast. It's is filled with watermelon, mango, papaya, and beautiful banana slices. For dessert, this is the perfect time of year to make a Banana Cream Trifle. You can layer this dessert in one big clear glass bowl or make minis and layer in wine or small juice glasses to make mini desserts. Either way, it's delicious and it looks so pretty. I hope these recipes inspire you to cook up some delicious Mexican-inspired food this week too!
