Hi there

Happy Friday! We're waking up in beautiful Hanalei Bay, Hawaii on the gorgeous island of Kauai.   Hoyt and I are getting married in a few days! Our family and guests are all flying in tomorrow.  I haven't seen my son Riley, who's a teacher in Japan, in a year.   I'm so excited to see him and the rest of our family! 

Before I left Wisconsin my girlfriends showered me with a surprise send off dinner.  I'm feeling so incredibly blessed!  Thank you so much for all your love, kind words and support! I promise to post lots of pictures of our wedding week and all the fun on Instagram and Facebook! 

It's been the most beautiful summer.  It was actually hard to leave Sheboygan, Wisconsin.  Sure hope we have great weather in Hawaii! All week before we left we were trying to eat really fresh and healthy.  I went to the farmers market to load up on veggies and fruit! The local sweet corn is here and I'm lovin' it! This Corn and Black Bean Salad is the perfect way to start your Taco Night! It's a salad.  It's a heathy dip with tortilla chips, it's both! For dinner I'm trying to keep things easy breezy this summer.  My Chicken Fajita Packets are so easy and no mess! You can throw them on the grill or bake them on a sheet pan on the oven.  Great for camping too!  Nice 'n lite and perfect for summer! Click Dinner for more fun summer recipes.

Sometimes a great big salad just really hits the spot on a hot summer night! My Taco Pasta Salad is a WINNER! If the kids like tacos they'll love this!  It's perfect for potlucks too! Click Salads foe more of my summer favorites. 

For dessert pick up some canned peaches and make my Coconut Peach Dump Cake.  In summer you can even make this in a foil pan on the grill.  It's like a peach crisp but even easier! Warm with vanilla ice cream it's heavenly!  Click Desserts more more more crazy easy sweet treats!
