I've got my corned beef! I'm so ready! I prefer the flat cut because it slices prettier and can be more lean. Some people love the point cut because it has more marbling and fat and can be a bit more tender. You do you! Whatever cut you prefer, I say get a big
corned beef roast or even two of them because the leftovers are a very good thing!
I have two favorite ways to make corned beef. I never boil it; that may spoil it! There are better ways top make it. My Roasted Corn Beef and Cabbage is full of flavor and
super easy! I add the cabbage, potatoes and carrots the last hour of cooking so they don't get mushy. Then, I make a honey, dill, mustard sauce to drizzle over the corned beef. It's AMAZING! You gotta try it! I also make Corned Beef in the Slow Cooker. It's easy breezy and turns out perfect every time!
Time to talk leftovers. This Reuben Soup is one of my favorite ways to use up that corned beef! It's easy, cheesy and just so delicious! Don't want to do a big corned beef roast this year? No big deal. Just pick up some sliced corned
beef from the deli. Just make this soup. It's lick the bowl good!
If like a good reuben sandwich, you'll love my Reuben Dip in a Bread Bowl! Talk about a way to get the St. Paddy's Day party started! What fun!
Corned Beef and Cabbage is more of an American tradition. In Ireland it's all about potatoes! Colcannon Potatoes are a traditional Irish dish! These are loaded with butter, green onions and sautéed cabbage. Great with bacon or corned beef on top too! This dish is pure comfort food and

For dessert, it's gotta be green! Bake up your favorite boxed brownies and turn them into a Chocolate Mint Trifle. You can make mini trifles too by layering this dessert in wine glasses, canning jars or even clear juice glasses. So cute and festive! Hey, if you're
