Happy Friday! I hope you had a great week! 

As much as I want to  go out for a fish fry tonight, I think we'll skip it. The places I love here in Sheboygan, Wisconsin get so busy during Lent.   

My plan is to make a delicious seafood dinner at home.   

I love a good casserole!  My friends in Minnesota call them a hot dish. Call them what you want, but for me there's nothing better than a really good one!  

My Shrimp Fettuccine Casserole is so good, it's company worthy. It's also perfect for a nice date night in! If I'm staying in on weekend night I always like to make a special dinner. 

It's my way to celebrate the weekend!  

This casserole is also a great way to serve shrimp on a budget. Got guests coming? 

You can put almost all of it together up to 2 days ahead and keep it covered in your fridge.  

Then sprinkle the Parmesan cheese and breadcrumbs on top and bake it when you're ready. LOVE THAT!

Gotta have a big beautful salad to serve with my casseroles. We've had some dreary days the last couple weeks.  

My Sunny Spinach Salad will brighten up dinner no matter what the weather. 

The lite homemade orange dressing makes this salad extra yummy!

I can't believe we're into March! Time to start thinking about St. Patrick's Day.  It's right around the corner. I put all my favorite recipes for the holiday all in one place.

If you're going to make corned beef and cabbage, why not try it my way. My Corned Beef in the Slow Cooker is easy breezy.  

That corned beef gets so tender. I like adding the cabbage and other veggies the last hour or two. That way they get tender but not mushy.  

I'm not of fan of mushy veggies. No thanks!

I always get a big corned beef brisket so that we've got lots of leftovers. 

I prefer the flat cut corned beef roast because it's easier to slice. Use those leftovers or pick up sliced corned beef from deli to make this beautiful Reuben Sandwich Ring.  

I serve it with Thousand Island dressing for dipping.  This is perfect for March Madness or a movie night in. 

It's got all the flavors of a Reuben Sandwich wrapped in crescent roll dough.  TOTAL YUM!  

Make this and you will look like a total rock star!

For dessert pick up a family size box of your favorite brownie mix and turn them into these Fuddy Mint Cupcakes. 

If you like chocolate and mint you're going to love these! Have the kids help frost and decorate them. What fun!
