Hi Cooking Moms, Dads & Friends,

I need to start out this newsletter with a BIG thank you! You may know I had a recent scare with skin cancer. I’m happy to say the surgery to remove it went very well and I’m cancer free! I want to thank you all for all of the love, support, kindness and prayers. They worked! I'm feeling so blessed and grateful. I can’t wait to get back to work next week. Besides my show in Green Bay, I’ll also be on TV in Milwaukee on Fox 6 Wakeup and The Jason Show in Minneapolis next week. Hope you’ll watch!

I'm getting excited for one of my favorite holidays. St. Patrick's Day! Bring it on! We go all out. I named my kids Riley and Ireland, so you could say we're just a wee bit Irish! Gotta have corned beef. I'd be in the dog house if I didn't make that every year. If you're making it too, you gotta make it my way this year. I've tried lots of different ways, but Corned Beef in the Slow Cooker is the way to go. Juicy, tender corned beef every time. And, so easy!

Here’s a tip. I always buy a flat cut, rather than a point cut corned beef. The flat is so much easier to slice and less fatty. Make sure to get a big one or even two smaller roasts because corned beef tends to really shrink up after cooking. I’m all about the leftovers. Read on for a variety of dishes you can make with leftover corned beef!

I'm dreaming of Colcannon Potatoes. It's a traditional Irish dish made with mashed potatoes, cabbage and green onions. I serve it piping hot with loads of butter on top. It’s great with leftover corned beef on top too! Click Sides for more of my favorite side dish recipes.

Besides corned beef, my Slow Cooker Beef and Beer Pot Roast is AMAZING! The beer in there gives it so much flavor!

Irish Beef Stew is another one of my favorites this time of year! Just throw all the ingredients in your slow cooker. It’s so easy and so good. Best stew EVER!

My son Riley LOVES isn’t a huge fan of corned beef but he sure loves my Slow Cooker Loaded Potato Soup. Your kiddos will enjoy it too! Click Dinner and Slow Cooker for more delicious recipes.

I like to serve my soups and stews with Beer Bread. It’s so easy to make! Just 4 ingredients. Makes the house smell so good.

For dessert, it’s gotta be green! Why not throw on an apron this weekend and bake up my Chocolate Mint Cupcakes? They are so pretty and they start with a boxed cake mix. LOVE THAT! The homemade mint frosting is so good!

My Mint Brownies are my favorite. If you like thin mint cookies, you’ll love these!

The kids will love my Shamrock Shakes! They taste just like the ones you get out, so why not save some dough and make them at home this weekend. Click Desserts and Drinks for more fun treats.

Hey, I mentioned leftover corned beef earlier. If you are lucky enough to have some, turn it into my delicious Reuben Soup, Reuben Egg Rolls, Reuben Quiche, and my favorite Reuben Dip!

I’m excited to announce my trip to Tuscany this September is fully booked! The good news is I’m planning to host another group trip to Italy in September of 2023. Stay tuned for more details! Let me know if you’re interested in going with me.

I recently got back from the most wonderful culinary trip to Puerto Vallarta, Mexico. From taco tours to cooking classes and whale watching. It was incredible!
