I hope you had a great week! I can’t believe we are nearing the end of August. Before summer sailed away I wanted to take my kiddos on a trip they’d never forget. We hit the road and drove to Bayfield, Wisconsin. It was AMAZING! The highlight was a day-long kayak trip on Lake Superior to see the Apostle Islands and the sea caves. WOW! So gorgeous! This weekend I’m adventured out LOL and we’re going to just chill out at home. My plan is to hit the Sheboygan farmer’s market Saturday morning and load up. The Wisconsin sweet corn is finely here!

I love to use leftover sweet corn in salads! My Southwest Corn and Black Bean Salad is fresh, healthy and delish! So pretty too! It’s prefect for potlucks and backyard BBQ’s! Delicious with my Crispy Baked Tortilla Chips for dipping too! Spoon the leftover salad over grilled chicken, steak or fish. You just gotta make it this summer!

Besides sweet corn, the cucumbers are here too. I love cukes! My Cucumber Mint Salad is so cool and refreshing! It goes great with whatever you’re grilling!

For dinner, I’m going to keep it nice and light this weekend. I think it's the perfect weekend for my Fajita Packets. You can bake them or throw them on the grill. Either way cleanup is a breeze! LOVE that!
