Hi Cooking Moms, Dads & Friends,

TGIF! I hope you had a good week! I’m getting excited because my daughter Ireland will be coming home soon. I haven’t seen her since the pandemic came around. She’s been quarantined in Minneapolis where she goes to college. I’m hoping when she gets home I can twist her arm and get her in the kitchen to cook with me LIVE on Facebook next week! Fingers crossed! She LOVES to cook!

I am so thankful to all of you who are watching me cook weekdays on Facebook. I’m thrilled to once again team up with Kwik Trip! As long as we are staying at home, I’m going to keep on cooking and doing what I do best! I’m sharing simple recipes to help get you through this difficult time.

Tonight I’m planning a special dinner! You gotta do that on the weekends! I think I’ll kick things off with Hot Artichoke Dip. Just pick up a can of artichoke hearts and I’m betting you have the rest of your ingredients in your kitchen to make this. You can make it with just 3 ingredients! CRAZY EASY! You need to make this. For dinner, my Bacon Wrapped Stuffed Chicken Breasts are always a WINNER! They seem kind of fancy but trust me they are so EASY BREEZY to make. On the side toss together my big Greek Salad and my Garlic and Herb Mashed Potatoes! Now, that’s one delicious dinner! I’m excited just thinking about it. I can’t believe Memorial Day is coming up next weekend. Bring it on! I’m hoping to grill all weekend but if the weather doesn't cooperate, I'm ready. I'll just break out the slow cooker and make my Super Easy Pulled Pork Sandwiches.

I’m so excited for all those summer salads! Bring on the potato salad. My Loaded Baked Potato Salad is seriously loaded with sour cream, cheese and bacon. Oh yeah! I’m so making it Memorial Day weekend! Click Salads for all sorts of super good salad recipes.

For something sweet, My Favorite Fruit Dip couldn't be easier. Just 4 ingredients. And, trust me it's AMAZING! I serve it with fresh strawberries or pretty fruit kabobs for dipping. It's so yummy that it doubles as a quick no-bake dessert.
