Hi Cooking Moms, Dads & Friends, I hope you had a great week! I’m waking up in Minneapolis this morning. It’s going to be a very special weekend. My daughter Ireland, who’s my youngest is graduating from the University of Minnesota this weekend. I can’t even believe it! Because of everything going on it’s not going to be a normal graduation ceremony but that’s okay. I’m just so excited to be here. We’ve got so much to celebrate! I’m one proud mom! I’ve got my tissues ready. Hoping I don’t cry too many tears of joy. YIKES! My baby is graduating! I promise to share pictures on Facebook and Instagram! It’s so nice that things are starting to get back to normal. For the first time in more than a year I was in the studio yesterday cooking up some of my favorite summer recipes on Twin Cities Live. I made my my Best Ever Lemon Chicken. It really is the BEST EVER! It's one of my go-to recipes. In the summer I like to make it in a foil pan on the grill. It’s perfect for backyard BBQ’s. I can’t wait for those this summer. I’ve sure missed them! I’m totally craving a steak on the grill! My Ginger Soy Flank Steak is my FAVE! The marinade makes it. I also love that I can make one big steak for all of us. Just make sure to let it rest 10 minutes or so before you slice it up. And always slice flank steak in thin strips against the grain. It’s tender as all get out. Nice and lean too! Click Dinner for more of my spring and summer faves. On the side my Cheesy Hash Brown Hot Dish is so good.
