TGIF! I’m so ready for the weekend! The snow this week was a bit of a bummer. Oh well, that’s spring in Wisconsin. On the bright side, I’ve got some fun news to share. This weekend we don’t have any major plans, except for Sunday night. It’s the Oscars! This year we tried to watch all of the Academy Award nominated movies. We make a super fun night of it, and I’m planning a special dinner the night of the Oscars. You gotta do that on the weekends. I think I’ll kick things off with some appetizers that seem kind of fancy but are actually super easy like my Simply Great Stuffed Mushrooms or my Maple Bacon Wrapped Scallops. Both are amazing. And just 4 ingredients each!

My Hot Artichoke Dip is ALWAYS a winner! Just pick up a can of artichoke hearts and I’m betting you have the rest of the ingredients in your kitchen to make this. For dinner, I’ve got chicken in the freezer. Bet you do too! Thaw it out and make my Bacon Wrapped Stuffed Chicken Breasts. They are so yummy! You know what they say, everything is better with bacon.
