Hi Cooking Moms, Dads & Friends, Happy Friday! I hope you had a great week. I’m getting excited for St. Patrick’s Day. I can’t believe next spring I’ll be in Ireland! I’ve always dreamed of going. Come with me in April 2022! This trip is going to be so special and different from the rest. We are even staying in two castles! From Irish cooking classes, to scone baking, whiskey tasting, a VIP tour of Guiness, and so much more. We’ll do it all! I can only take a small group and this trip is really filling up fast. It didn’t last long, but the sunshine and warm temperatures sure felt so nice. Now that it’s back to being chilly again I’m craving comfort food. Namely corned beef and cabbage! I’m headed to the grocery store today. Time to buy my corned beef brisket! My Corned Beef in the Slow Cooker turns out super tender and perfect every time! I think it's that little bit of beer in it that makes it extra special. Here’s a tip. I always buy a flat cut, rather than a point cut corned beef. The flat is easier to slice and less fatty! Make sure to get a big one or even two smaller roasts because corned beef tend to really shrink up after cooking. I’m all about the leftovers! I think leftover corned beef is a very good thing. I'm dreaming of Colcannon Potatoes. It's a traditional Irish dish made with mashed potatoes, cabbage and green onions. I serve it piping hot with loads of butter on top. Amazing! Click Sides for more of my favorite side dish recipes. After St. Paddy’s Day I use the extra corned beef to make my Reuben Soup, Reuben Quiche, and yes even Reuben Egg Rolls! So yummy! Besides corned beef, my Irish Beef Stew is another favorite this time of year! Just throw all the ingredients in your slow cooker. It’s so easy and so good. Best stew EVER!
