Hi Cooking Moms, Dads & Friends,

Happy Friday! I hope you had a great week! It’s Lent and that means for a lot of us, no meat on Friday. The fish fry places in Wisconsin are going to be slammin’ tonight! Don’t get me wrong. I love a good fish fry, but, sometimes it’s more relaxing to cook seafood at home. If you're looking for some new recipes for Lent, I've got 'em.

Like shrimp? I love it! My Cheesy Baked Shrimp Sandwiches will be a huge hit! Warm out of the oven these sandwiches are to die for! They make a delicious dinner served with my Sunny Spinach Salad. You need to make these! Click Sandwiches and Salads for more sensational sandwich and salad recipes.

Want to make something that seems a little fancy this weekend? I love doing that! My Shrimp and Artichoke Scampi is amazing! You'd pay big bucks for this out at a restaurant. Save some dough and make it at home. You won't believe how easy it is to make!

You can’t go wrong with homemade mac ’n cheese! Have you ever thought about making it in your muffin tins? My Mac ’n Cheese Minis are so fun! The kids will love them!

I can’t believe it’s March and St. Paddy’s Day is right around the corner! Time to buy that corned beef brisket! I always buy the flat cut corned beef! It’s a lot less fatty than the point cut. My Corned Beef in the Slow Cooker is the way to go! Turns out perfect every time. Don’t even think about doing it another way!

My Slow Cooker Beef 'n Beer Pot Roast is another favorite for St. Paddy’s Day! So good and super easy! Click Slow Cooker for more slow cooker recipes.

Both are great served with my homemade Beer Bread! It’s the easiest recipe ever!

For dessert, it’s gotta be green! Like my version of Shamrock Shakes or Chocolate Mint Brownies! Yum! Click Desserts and Drinks for more fun recipes.

Join Me for My Next Culinary Trip!

In September 2019, I hosted my first culinary group and it was pretty amazing! We had a group of 35 people on the trip of a lifetime to Tuscany, Italy. We learned how to make pasta, toured Italian wineries and did so much more!

You all have been asking. Where are we going next? Well, pack your bags and your swimsuit because my next trip is in January 2021 to one of my very favorite places. JAMAICA! My family has been going to Jamaica for 20 years! We’ll explore some of my favorite places and hidden gems that most tourists don’t know about! We’ll go in search of the best jerk chicken and pork, Blue Mountain coffee and other hidden gems!

The Jamaican people are some of the most caring and kind people I’ve ever met. Bring on the reggae music and rum punch, and join in the fun! After this trip you too will fall in love with this island! This trip is going to fill up fast! Click Culinary Trip to Jamaica to read more. Brittany at Ambassador Travel is coordinating the trip, so you can call her at 920.236.7777 or email her at brittany@ambassadortravelltd.com to ask more detailed questions.

Gotta run. My dog Arlo is begging me to take him on a walk.

You can always see what I’m up to on Facebook and Instagram. Follow me!

Have a great weekend. Stay warm and cook up some memories!

Take care,
Amy, The Cooking Mom
