Hi Cooking Moms, Dads & Friends,

TGIF! I hope you had a great week! It’s the first Friday of Lent and that means for a lot of us, no meat on Friday. I love a good Wisconsin fish fry but they are going to be jam packed tonight. So hey, if you're looking for some new recipes for Lent, I've got 'em.

I grew up eating tuna casseroles during Lent. To this day, I still crave a good one. I think my Terrific Tuna Casserole is the best ever! The crunchy potato chips on top are just one of the things that makes this recipe totally terrific!

I also love a good tuna melt! My Baked Tuna Melt is one of my FAVES! It’s great with my Homemade Tomato Basil Soup. YUMMY! Click Sandwiches and Soups for more super good sandwich, soup and stew recipes.

Not a fan of tuna? I know, it's not for everybody. No worries. Why not treat the family to an extra special dinner tonight or this weekend? My Shrimp Fettuccine Alfredo is amazing! You'd pay big bucks for this out at a fancy restaurant. Save some dough and make it at home. You won't believe how easy it is to make. Trust me! Once you try it, you'll never buy alfredo sauce in a jar again.

Speaking of shrimp, tomorrow I’ll be on Fox 6 Wakeup in Milwaukee making more meat free recipes for Lent, like my Greek Shrimp and Pasta. Feels kind of fancy but it’s super easy breezy and a great way to do shrimp on a budget!

Drum Roll Please….Today I’m Announcing My Next Culinary Trip!

In September 2019, I hosted my first culinary group and it was pretty amazing! We had a group of 35 people on the trip of a lifetime to Tuscany, Italy. We learned how to make pasta, toured Italian wineries and did so much more!

You all have been asking. Where are we going next? Well, pack your bags and your swimsuit because my next trip is in January 2021 to one of my very favorite places. JAMAICA! My family has been going to Jamaica for 20 years! We’ll explore some of my favorite places and hidden gems that most tourists don’t know about! We’ll go in search of the best jerk chicken and pork, Blue Mountain coffee and other hidden gems! We’ll stay at a beautiful small resort right on the beach. It’s a boutique resort and it’s ALL-INCLUSIVE too meaning all your meals and your drinks at the resort are included.

The Jamaican people are some of the most caring and kind people I’ve ever met. Bring on the reggae music and rum punch, and join in the fun! After this trip you too will fall in love with this island! We’ll spend 7 days in paradise! We'll fly out as a group from the US on Saturday January 16, 2021 and return home January 23. This weekend we have not set plans. I love weekends like that! I got new cross country skis for Christmas so I hope to get out on the trails and use them this weekend. It’s supposed to be sunny and beautiful here!

Gotta run. My TV spot in Milwaukee is coming up soon. I hope you’ll watch! We’re headed to South Bend later today to cheer on the Notre Dame hockey team, and then next week I’ll be in the Big Apple. If you have any favorite spots in New York City, please share!
